Paneer Tikka Masala

Today I tried making Paneer Tikka Masala and it came out good so I am sharing my recipe for it.


Ingredients:

Paneer Tikka-
200 gms of Paneer cut into small cubes
1/2 green, orange, yellow, red bell pepper
1 small zucchini
5 table spoons of curd
1 tea spoon ginger garlic paste
1 tea spoon red chilli powder
1 tea spoon garam masala
1 tea spoon salt
2 tea spoon orange chicken sauce or any other marination sauce (not mandatory but it tastes good)

Gravy-
4 table spoon canola oil
.5 tea spoon cumin seeds
.5 tea spoon all purpose floor
1 onion
1 cup tomatoe puree
1 tea spoon red chilly powder
1 tea spoon garam masala
1 tea spoon cumin powder
1 tea spoon coriander powder
1 tea spoon turmeric powder
salt to taste

Preparation:

Paneer Tikka-
1.)Hung curd in a mslin cloth for 3-4 hours so that it becomes thick.
2.)Mix the hung curd with the ingredients mentioned for paneer tikka above. Marinade the paneer cubes with the paste.
3.)Refridgerate the mixture for 4-5 hours.
4.)Place the paneer mixture on the skewer and grill it on the griller. Once grilled and cooled take it out onto a plate.
Gravy-
1.)Heat oil and add cumin seeds to it. When the seeds begin to popp add chopped onions. Add some salt to bring out the extra moisture.
2.)After the onions are golden add turmeric power. To this add ginger garlic paste.
3.)Add the all purpose floor and cook well for 5 minutes. To this add tomatoe puree, chilly powder, cumin powder and coriander powder. Mix this mixture till you see small amount of oil loosing out.
4.)When the mixture is dry add milk to make this thin gravy. Let this mixture boil and then add the paneer tikka prepated earlier to it.Keep it on low flame for 2-3 minutes.
5.)Sprinkle corriande leaves for garnishing


Notes:
You can add cream to make the masla more rich but I prefer not adding cream since it adds extra calories to the preparation:)

Egg Biryani



I made Egg Biryani which I like a lot. Never tried before but it came out really delicious this first time so thought of sharing the recipe.

Ingredients:
For Rice:
1 cup of washed coriander leaves
1 cup of washed mint leaves
1 cup curd
1 small onion
.5 tea spoon jeera(cumin powder)
1 spoon garam masala (not the powder but pieces of garm masala)
50 gms biriyani masala (I used MDH and it was good but you can try any one avaliable in the indian store)
1 tea spoon ginger garlic paste
4-5 green chilly
2 cups rice
2 table spoon saffron water
Salt to taste

For Eggs preparation
4 boiled eggs
2 tea spoon baisan (chickpea flour)
.5 beaten egg
.5 tea spoon red chilly powder
.5 tea spoon ginger garlic paste
.5 tea spoon jeera powder (cumin powder)
.5 tea spoon coriander powder



Preparation:
For rice-
Keep rice soaked in water for 45 minutes.
1.) Warm .5 cup oil and put the cumin seeds and the garam masal.
2.) Cut onion wedges and put it in the oil. Add the green chillies.
3.) Add corriander and mint leaves. Add the ginger garlic paste to the mixture and some salt to taste.
4.) When the onions turn red add the curd and mix it to the preparation.
5.)Add the already rice with 3 cup of water and close the lid of the container and keep it on low flame for 10 minutes and then open the lid to see if the rice is cooked. If cooked add saffron water to the rice.

For Eggs-
1.)Add the red chilly powder, cumin powder, ginger garlic paste, coriander powder and baisen to a mixing bowl. Add some egg and mix this prepartion.
2.)Dip the boiled eggs in this mixture
3.)On a pan add butter and then add the bolied eggs coated with the above mixture and saute it on low flame for some time so that they are not burned yet look cooked.
4.)Add these cooked eggs to the rice above.

Orka



Most of us love Orka but I like to make it for my husband since its his favorite veggie.I prepare it in less of oil and also its very simple to make in case you have very little time.


Ingredients:
2 table spoon canola oil
1 small onion
4 cups orka sliced from middle
.5 tea spoon cumin seeds
1 tea spoon corriander powder
1 tea spoon garam masala
a pinch of sugar
.5 tea spoon red chilly powder
.5 turmeric podwer
salt to taste

Preparation:
1.) Wash the orca and dry it completely. Make sure there is no water remaining by cleaning it using a clean cloth. Slice the orca from the middle and cut in into half.
2.) Heat oil in a pan and add cumin seed to it. When the seeds start to popp up add the onions to it. When the onions are light brown add the orka and lower the flame. Add sugar,1 spoon of corriander powder and a pinch of salt and cover the pan with a lid.
3.) After 10 -12 minutes check if the orka is cooked and add the remaining spices(1 tea spoon corriander powder, 1.5 tea spoon garam masala, .5 tea spoon red chilly powder,.5 turmeric podwer, salt). Keep it on high flame for 3-4 minutes. check to see it the orka is cooked.
4.)Sprinkle corriande leaves for garnishing


Notes:
Add pinch of sugar to get the green colour of the orka as it is. A point told by a friend who is a good cook .

Tandoori Chicken


I serve the tandoori chicken with bread, coriander chutney and sauted veggies.

Ingredients:
4 table spoon curd
1 tea Spoon Red Chilli Powder
1 tea Spoon Garam Masala
1 tea Spoon Ginger garlic Paste
3 tea Spoon Lemon Juice
2 table spoon orange chicken sauce or any other marination sauce (not compulsary but it tastes good)
1 tea spoon Oil
Salt to taste
4 Chicken leg pieces

Preparation:
1.) Make horizontal cuts in the chicken and add lemon juice and red chilly to the chicken legs and keep it aside for 1 hours.
2.)Hung the curd in a muslin cloth on the kitchen tap to remove the liquid from the curd. Keep it for 4-5 hours and then remove it in a small bowl.
3.)Add the spices to the hung curd ,oil,ginger and garlic paste.
4.) Keep this marinated chicken aside for 5 hours.
5.)Preheat oven to 395F(200C)and keep chicken on the foil. Bake it for 15 minutes
Turn the chicken to face other side. Bake for another 15 minutes. Again turn the chicken bake for another 10 minutes
6.)Sprinkle chaat masala and serve with onions rings and lemon wedges

Notes:
Use color to make it look reddish. I did not use it.

Coriander Chutney

The chutney is good at the side for many things like biriyani, rice, pakodas etc.

Ingredients:
3 cup of corriander leaves
1 tea spoon salt
.5 tea spoon sugar
1 green chilly
1 tomato
1 small onion

Preparation:
1.) combine tomato, onion, chilly, corriander leaves, salt and sugar and gind it in a mixer.
